Experience
Since 2023, I have made more than 100 (demonstrable) cuts of pieces of all qualities, throughout the north of Spain. I work, with distributors and directly with the dryers, of brands such as 5J, Enrique García, Comercial Millor, Asave.

Cut hams, shoulders, sausages, cured meats, cheeses and smoked fish at events. Vacuum cutting and packaging of particular pieces given as gifts in Christmas baskets or private purchases. Packaging is carried out according to the consumer's preferences, in weight, size and presentation. With the packaging, the envelopes of tacos/cutouts, the bones of the piece and two sachets of bacon for elaborations in cooking recipes are delivered.
Equipment, setup and transport
I have all the necessary equipment to make the cut. Travel is included in the price of the service, in addition to the transport of the piece. The assembly is coordinated by the company, catering or place of production.
Spaces
To adapt to any space and type of contract, I have a high-risk food handler's card, civil liability insurance and various wine tasting courses.
Estimated prices
In general, the slicing service of a complete ham is 4 hours. In the case of shoulder cutting, the time and price is lower. All services include travel. In the service you can choose whether you want the complete cut of the piece or only half. In the case of cutting the whole piece and not all of it is consumed, it can be vacuum-packed, at no additional cost. In the case of half a piece, the cost of cutting would decrease. In the event that you select the quote with the part included, the shipment of the same is made in advance and the cost of shipping is included in the price. The quality of the piece to be cut does not decrease the price of the cut. The service includes the distribution of the sausage on biodegradable single-use plates. 160€ service in Vizcaya. €170 in Álava and Guipúzcoa. €200 in La Rioja, Cantabria or Aquitane. In the case of the cutting and packaging service of the pieces, the price is 10€/Kg of weight in the piece collected and delivered to the same place.
